Greek Salad

This is a delicious and easy salad that is healthy and full of flavor.  It's great as a side dish or main course.  I love having Greek Salad for lunch and putting it over romaine lettuce to make it a little more hardy.  The salad goes great with a glass or 2 of Savignon Blanc or a Rose.  Cheers!

2 Cucumbers peeled, quartered and diced

1 5 oz. container of cherry tomatoes cut in half

1 9.5 oz. jar of sliced Kalamata olives drained

1 12 oz. container of crumbled feta cheese

1/2  of a medium sized red onion thinly sliced


Dressing:

1/2 cup extra virgin olive oil.

1/4 cup red wine vinegar.

1 Tbs. dijon mustard.

1 tsp. dried oregano.

1 tsp. lemon juice.

1/2 tsp. black pepper.


Combine diced cucumber, tomatoes, kalamata olives, feta cheese and red onion into a mixing bowl. For the dressing, combine all the ingredients and shake in a closed container until dressing is completely mixed and emulsified. Pour over salad and mix.  I put my salad over some chopped romaine lettuce, but you can eat it by itself.
