Tasty and Crunchy Cabbage Salad

This is such a tasty and easy salad to make.  I love having this side salad with lasagna and other pasta dishes.  It has such a nice crunch and is a pretty salad too.  Remember, we eat with our eyes first.  Because this salad is made with cabbage, it is still delicious and crunchy the next day for lunch.  A nice chardonnay, sauvignon blanc, rose or even a viognier pairs perfectly with this salad.  Cheers!   Tasty and Crunchy Cabbage Salad 1/2 head of green cabbage  1/2 head of red cabbage 1 cucumber 1/2 of a fresh lemon  5 green onion 1 Tbsp. fresh dill 1/4 cup extra virgin olive oil Salt and pepper to taste Rinse and shred green and red cabbage into a large bowl. Squeeze half a lemon over the cabbage and mix well. Peel and Slice cucumber into small rounds and then cut in half. Chop green onions.  Add to the bowl with shredded cabbages. Sprinkle with freshly chopped dill, salt and pepper.   Drizzle with olive oil. Mix to combine and serve.

Cauliflower Lasagna

 Happy New Year!  I'm starting off this year with a delicious and healthy meal that the family will love.  This is a quick recipe that is full of flavor and low in carbs. I use a whole head of cauliflower for this recipe.  DO NOT use the riced cauliflower.  It will not stand up to this recipe.  It gets soggy and soupy.   Honestly, any red wine goes great with this dish.  I love a Cabernet Sauvignon, Merlot, Zinfandel or a Chianti. Saluti! 1 to 1 1/2 heads of cauliflower (about 4-5 cups chopped) 3 Tbs. extra virgin olive oil 2 cloves of garlic finely chopped 1 lb. of ground Italian sausage or turkey sausage 1 jar of your favorite Marinara or Arrabiata sauce 2 cups of shredded mozzarella cheese 1/2 cup shredded Parmesan cheese 1 Tbs. garlic powder 1/2 tsp. dried oregano 1/2 tsp. each salt and pepper Preheat oven to 400 degrees. Wash cauliflower.  Cut out the core.  Chopped cauliflower into 1 inch pieces.  Make sure most of the stem is cut off.   Put cauliflower into a baking dish.  P

Turkey Chili

  I love this delicious turkey chili recipe. It's easy to make and has lots of flavor. You can make it as spicy as you want. If you don't like it spicy, when in doubt, leave it out! I usually double the recipe and freeze it for another nights dinner. My family loves this recipe and it's perfect in the winter to warm yourself up. I love a Sauvignon Blanc as a white wine with this recipe, but if you prefer a red, a Pinot Noir pairs perfectly with this flavorful chili. Cheers! Serves 4-6 2 lbs. ground turkey meat 1 tbsp. extra virgin olive oil 4 cloves garlic, minced 1 green bell pepper, diced 1 /2 -1 jalapeno, diced 1/2 yellow onion, diced 2 15 oz. cans of tomato sauce 1 14.5 oz can of diced tomatoes 1/2 cup of water 1 can kidney beans, drained and rinsed 1 can black beans, drained and rinsed 1  Chipotle Pepper in Adobe chopped plus one tsp. of sauce * 3 tbsp. chili powder 2 tbsp. cumin 1 tbsp. onion powder 1 tbsp. garlic powder 1/2 each of salt and pepper *Note.  Add m

Fresh Spinach and Mandarin Orange Salad

This is a simple but very delicious salad that's perfect for any meal.  It's fresh and light.  I love a glass of chardonnay or Sauvignon Blanc with this salad.  Cheers!   Fresh Spinach Salad 5 oz. of Fresh Spinach 1 11oz. can of Mandarin oranges drained OR 2 fresh mandarin oranges peeled and sectioned  1/2 cup toasted Sliced Almonds Dressing: 1 clove garlic finely minced 1/4 cup champagne vinegar 1 tablespoon Dijon mustard 1 tablespoon honey 1 teaspoon lemon juice 1/2 teaspoon salt 1/2 cup extra virgin olive oil Place all the ingredients into a mason jar with a tight fitting lid and shake until the dressing is emulsified.  

Winter Salad

  Winter Salad 2 cups Napa cabbage, thinly chopped 6 cups spring mix greens or any in season lettuce 1 cup pomegranate seeds 1 pear sliced 1 apple sliced 1 avocado sliced 1 cup red onion, thinly sliced 6 oz. fat-free feta cheese 1/2 cup roasted pecans Dressing 1 clove garlic finely minced 1/4 cup champagne vinegar 1 tablespoon Dijon mustard 1 tablespoon honey 1 teaspoon lemon juice 1/2 teaspoon salt 1/2 cup extra virgin olive oil Place all the ingredients into a mason jar with a tight fitting lid and shake until the dressing is emulsified.   In a large mixing bowl, combine cabbage and greens. Add pomegranate seeds, sliced pear, apple, avocado, red onion. Pour half the dressing mixture over the salad and toss to combine. Add more dressing to desired taste. Top with feta cheese and roasted pecans and gently toss. 

Light White Wine Spritzer

  Light White Wine Spritzer 1 oz. nectarine juice, apricot, mango or orange juice 4 oz. white wine (sauvignon blanc or pinot grigio) 1 oz. sparkling water 1 orange sliced 1  lime sliced 1-2 strawberries sliced Fill a wine glass with crushed ice.  Add nectarine juice, white wine, sparkling water, orange slice, lime slice and strawberry slices.  Gently stir.  Garnish with a basil leaf. 

Green Goddness Dressing

  Green Goddess Dressing 1 cup plain greek yogurt 1 cup fresh parsley 1/2 cup fresh basil 2 tablespoons fresh tarragon 1 clove finely minced garlic 1/2 cup fresh chives 2 tablespoons lemon juice 1 tablespoon extra virgin olive oil 1/2 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon red pepper flakes (optional) Add all the ingredients into a food processor or blender.  Blend until smooth. Serve immediately or refrigerate for up to 4 days.
