 Winter Salad


2 cups Napa cabbage, thinly chopped

6 cups spring mix greens or any in season lettuce

1 cup pomegranate seeds

1 pear sliced

1 apple sliced

1 avocado sliced

1 cup red onion, thinly sliced

6 oz. fat-free feta cheese

1/2 cup roasted pecans


Dressing

1 clove garlic finely minced

1/4 cup champagne vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon lemon juice

1/2 teaspoon salt

1/2 cup extra virgin olive oil


Place all the ingredients into a mason jar with a tight fitting lid and shake until the dressing is emulsified.  


In a large mixing bowl, combine cabbage and greens.

Add pomegranate seeds, sliced pear, apple, avocado, red onion.

Pour half the dressing mixture over the salad and toss to combine.

Add more dressing to desired taste. Top with feta cheese and roasted pecans and gently toss.
