Tasty and Crunchy Cabbage Salad

This is such a tasty and easy salad to make.  I love having this side salad with lasagna and other pasta dishes.  It has such a nice crunch and is a pretty salad too.  Remember, we eat with our eyes first.  Because this salad is made with cabbage, it is still delicious and crunchy the next day for lunch.  A nice chardonnay, sauvignon blanc, rose or even a viognier pairs perfectly with this salad.  Cheers!


 Tasty and Crunchy Cabbage Salad


1/2 head of green cabbage 

1/2 head of red cabbage

1 cucumber

1/2 of a fresh lemon 

5 green onion

1 Tbsp. fresh dill

1/4 cup extra virgin olive oil

Salt and pepper to taste


Rinse and shred green and red cabbage into a large bowl.

Squeeze half a lemon over the cabbage and mix well.

Peel and Slice cucumber into small rounds and then cut in half. Chop green onions.  Add to the bowl with shredded cabbages.

Sprinkle with freshly chopped dill, salt and pepper.  

Drizzle with olive oil.

Mix to combine and serve.
