Alan's Macaroni Salad

When the weather gets nice, I think of BBQ's, potlucks and picnics.  One of my favorite memories is of my dad grilling and making macaroni salad.  It's s simple recipe and full of flavor.  I like to make it early in the day so it's nice and cold for dinner. This salad is perfect with grilled chicken, hamburgers, steak, hot dogs, ribs and pretty much anything else you can grill. Depending on what you grill, pick any wine you're in mood for.  Cheers!

Serves 6-8

1 lb. elbow macaroni noodles

1 -1/14 cups of mayonnaise

1/2 Tbs. of Dijon mustard

2/3 cup sliced green olives with pimentos

4 green onions diced.  Note: use white and green parts

1/3 cup chopped parsley

1/2 tsp. salt

1/4 tsp. pepper

2 hard boiled eggs sliced

Cook macaroni noodles according to directions.  

Drain and rinse with cold water.  Put drained noodles into a big bowl.  Let the noodles cool down in the refrigerator for an hour or two .

Add mayo, Dijon mustard salt and pepper and mix well to combine.  

Add sliced olives, sliced green onions, chopped parsley and mixwell.

Top with sliced hard boiled eggs.
