Kielbasa and Cabbage dinner

 I love this quick and delicious dinner for my family.  It's one pot with great flavor.  It's super hearty and perfect for a weeknight dinner.  This recipe is ideal if your watching your carbs and your wallet.  A delicious Sauvignon Blanc or even a Merlot goes perfectly with this meal.  Cheers!


14 oz. kielbasa 

1  yellow onion finely chopped

6 cups (1 large head) chopped green cabbage

1 Tbs. extra virgin olive oil

salt and pepper to taste


Mustard Vinaigrette:

1/4 cup extra virgin olive oil

2 Tbs. red wine vinegar

2 Tbs. whole grain mustard

1/4 tsp. each salt and pepper

Prepare the vinaigrette first.  Combine all the ingredients into a mason jar and shake until combined OR put all the ingredients into a small mixing bowl and combine using a whisk. Set aside on the counter.


Slice the kielbasa into small medallions. In a large dutch oven, heat 1 tablespoon of extra virgin olive oil.

Saute sausage over medium high heat until sausage begins to brown.

Add the finely chopped onion to the sausage.  Continue to saute until the onions are soft and translucent.

While sausage and onions are sauteing, chop the cleaned cabbage into 2 inch by 1/2 inch slices.

Add the cabbage to the pot with the onions and sausage and saute.  Add salt and pepper.  

Turn heat down to medium, cover and cook cabbage until tender.

When cabbage is tender, add half the mustard vinaigrette to the pot and stir.  Add more to desired taste.  

Serve warm.
