Gilled Apricot with Yogurt and Honey
3 apricots
1 tbsp olive oil
4 ounces Yogurt
1/4 cup pecans
1-2 tbsp honey
Heat grill or grill pan to medium high.
Slice apricot in half and remove the pit.
Brush the grill with olive oil. Place apricots cut side down on the grill and cook for 3-5 until grill lines form. Flip apricots over and cook for another 3-5 minutes.
Remove apricots from the grill and place on a plate.
Top each apricot with a dollop of yogurt, a sprinkling of pecans and drizzle honey over the top.
Serve immediately.
