Shrimp, Peppers and Andouille Sausage Skewers
1 lb. large shrimp, peeled and deveined (leave tails on)
1 pint cherry tomatoes
1 large yellow pepper cut into 1 ½ inch pieces
1 large orange pepper cut into 1 ½ inch pieces
3 tbsp extra virgin olive oil
2 tsp paprika
Salt and pepper to taste
6 oz. andouille sausage sliced
In a bowl, combine extra virgin olive oil, paprika, salt and pepper. Add shrimp, tomatoes, and bell peppers to the bowl. Toss.
Thread the skewers with alternating yellow pepper, shrimp, tomato, andouille then orange pepper.
Place skewers on a medium high grill and cook 3-5 minutes per side or until shrimp are opaque. Serve.
