Green Bean, Corn and Carrot Salad

 Green bean, Corn and Carrot Salad


½ tsp salt

2 tbsp red wine vinegar

2 garlic cloves, grated

1 tbsp Dijon mustard

½ cup extra virgin olive oil

¼ cup chopped fresh chives

1 lb. green beans, trimmed

2 ½ cups fresh corn kernels

2 cups grated carrot


In a mason jar, combine salt, vinegar, garlic and mustard.  Shake to combine. Add chives.  Shake before using.


Bring a pot of salted water to a boil.  Add Green beans and cook for 2-3 minutes or until just tender.  Drain and cool,  Cut into bite sizes.


In a large bowl, combine beans, corn and carrots.  Drizzle dressing over the top and season with more salt and pepper if needed.  Toss to combine.
