Pumpkin, Beef and Bean Chili


1 ½  lbs ground beef 

1 medium onion, chopped

1 red bell pepper, chopped

4 cloves of garlic, minced

2 tbsp chili powder

1 ½ tsp ground cumin

1 tbsp dried oregano

¼ tsp cayenne pepper

3 cups cubes pumpkin (butternut squash works too)

1 15 oz. can of black beans, drained and rinsed

1 14.5 oz can of diced tomatoes

1 ¾ cup beef broth

1 ¼ tsp salt

1 tsp pepper

⅓ cup chopped fresh cilantro

Sliced jalapenos for garnish


Cook beef over medium high heat in a large dutch oven until browned.  This will take 7-8 minutes.


Remove meat with a slotted spoon to a bowl.


Cook onions, red bell pepper and garlic in the dutch oven with the beef drippings.


Stir in chili powder, cumin, oregano and cayenne pepper and cook for 1 minute.


Add pumpkin cubes, black beans, diced tomatoes, beef broth, salt, pepper and beef.


Bring to boil, reduce heat and cook for 20-25 minutes.  Stir in cilantro. Adjust seasoning if needed.


Serve with sliced jalapenos on the top.
