Turkey Pumpkin Chili

 

Turkey Pumpkin Chili


1 tbsp extra virgin olive oil

1 large onion, chopped

3 cloves of garlic, minced

1 lb. ground turkey 

2 tsp ground cumin

2 tablespoons chili powder

¼ tsp cinnamon

⅓ tsp cayenne pepper

½ tsp salt

¼ tsp pepper

2  (7 oz.) cans of green chiles

2 cans of white beans, drained and rinsed

1 can of pumpkin puree

2 cups chicken stock

Cheddar cheese, sour cream and cilantro for garnish


In a large stock pot on medium high heat, add extra virgin olive oil, onions and garlic. Sauté  for 3-4 minutes or until onions are translucent.


Add the ground turkey meat. Using a spatula, break up the turkey meat. Cook for 5-7 minutes or until meat is cooked through, stirring occasionally.


Add the cumin, chili powder, cinnamon, cayenne pepper, salt and pepper. Stir to combine.  Sauté for 1 minute allowing the seasonings to become fragrant. 


Pour in green chiles, drained white beans, pumpkin puree and chicken stock.  Stir to combine all the ingredients. 

 

Cook chili for 20-25 minutes.  Chili will be chunky.  Add more chicken stock if you would like a thinner chili.  Adjust seasoning if needed. Serve immediately with garnishes.
