Holiday Salsa with Green Apples and Pomegranates

 


Holiday Salsa


12 corn tortillas

Cooking spray

½ tsp salt

1 ½ cup pomegranate seeds

½ cup red onion, chopped

½ -1 jalapeno, finely chopped

¾ cup green apple, peeled, seeded and finely chopped

¼ cup fresh cilantro, chopped

2 tbsp fresh lime juice

Salt and pepper to taste


Preheat the oven to 350 F. Cut the tortillas with a star cookie cutter.  Repeat until all the tortillas have been cut.


Place star chips on a single layer on a baking sheet and lightly grease with spray.  Season with a sprinkling of salt.  Bake until golden brown and crisp.  This will take 12-14 minutes.


Combine pomegranate seeds, onion, jalapeno, green apple, cilantro and lime juice in a bowl. Season with salt and pepper.  Stir to combine.  Serve chilled with chips.
