No Bake Chocolate Cookies


½ cup salted butter

1 ¾ cups granulated sugar

⅓ cup unsweetened cocoa powder

½ milk

1 teaspoon vanilla extract

⅔ cup creamy peanut butter

3 cups quick oats


Line 2 baking sheets with parchment paper. 


In a 3 quart saucepan, combine butter, sugar, cocoa and milk. Set over medium high heat and cook, stirring frequently until it reaches a boil.


Allow mixture to boil for 60 seconds WITHOUT stirring.


Remove from heat and add vanilla extract, peanut butter and oats. Stir mixture until combined.  Using a 2 tablespoon scoop, drop mixture on the lined baking sheet.  Refrigerate for 20-30 minutes.  Store in an airtight container at room temperature.
