 Mini Reuben Sandwiches


1 loaf of cocktail rye bread

1 cup thousand island dressing

1 lb. sliced cooked corned beef

16 ounces sauerkraut, rinsed and drained

1 lb. sliced Swiss cheese


Preheat oven broiler or air fryer


Arrange slices of rye bread on a baking sheet. Top each slice with a teaspoon or 2 of thousand island dressing.  


Top with corned beef slices to cover the slice of the bread.


Add some sauerkraut over the corned beef and cover with a quarter of a slice of Swiss cheese.


Broil for 3-5 minutes or until the cheese is melted.  Serve warm.
