Peach Sorbet

 

5 peaches, pitted and sliced (about 5 cups)

½ tablespoon fresh lemon juice

¾ cup granulated sugar

Mint leaves for garnish

Place all the ingredients in a heavy-duty blender or Ninja processor. Puree for 1-2 minutes on high until the mixture is smooth and the peaches are liquified.  If the blender does not puree the skins fully, pour the mixture through a fine mesh sieve.

Pour mixture into a 9 inch loaf pan or shallow baking dish.

Cover the mixture and freeze for 6-8 hours or until full set. Serve chilled with mint leaves.
