Shaved Brussel Sprout Salad





2 lbs brussel sprouts, halved and thinly sliced

½ cups pomegranate seeds

1 large ripe red pear cored and diced

½ cup chopped toasted almonds

½ cup crumbled goat cheese


Viniagrette 

¼ cup extra virgin olive oil

¼ cup lemon juice

1 teaspoon dijon mustard

1 teaspoon honey

¼ teaspoon each salt and pepper


Whisk together the olive oil, lemon juice, dijon mustard, honey, salt and pepper or shake in a mason jar.


In a large mixing bowl, combine the shaved brussel sprouts, pomegranate seeds and pears.


Pour the dressing over the mixture and mix well.  Top with almonds and goat cheese.  Serve.
