Spinach, Feta and Artichoke Dip


8 oz. crumbled feta cheese

1 cup cream cheese

2 cups shredded mozzarella cheese, divided

1 cup frozen spinach, defrosted and squeezed dry

1 13.5 oz can of artichoke hearts, drained and finely chopped

½ teaspoon salt

¼ teaspoon black pepper

Crackers or pita chips for serving


Preheat the oven to 350 degrees.


In a large bowl, combine feta cheese, cream cheese, 1 cup shredded mozzarella cheese, frozen spinach, chopped artichoke hearts, salt and pepper.  Mix well to combine.


Add mixture to a baking dish.  Top with the remaining mozzarella cheese.  Bake for 15-20 minutes or until the top is golden and bubbling.
