Roast Beef
3 pound top round roast
1 tablespoon extra virgin olive oil
1 tablespoon salt
2 teaspoons black pepper
1-2 tablespoon fresh rosemary, chopped
Preheat the oven to 450 degrees. Fit a rack in a roasting pan.
Rub top round roast with extra virgin olive oil. Spread salt and pepper all over the roast.
Place the seasoned roast on the rack in the roasting pan in the middle rack in the oven. Roast uncovered in the oven for 15 minutes. Reduce the heat to 325 degrees. Roast for another 45-50 minutes or until the thermometer reads between 135-140 degrees.
Remove the pan with the roast from the oven, loosely tent with foil and allow the meat to rest for 10 minutes. Garnish with the chopped rosemary. Slice thin and serve immediately.
